Ingredients

  •  400 gr. natural tofu cut into sticks
  •  3 tbsp spice mix for chicken
  •    2-3 tbsp lemon juice
  •    120 gr. flaxseed
  •   1 cup. flour
  • 1 cup bread crumbs
  •    4 tbsp olive oil
  •  oil for frying
  •  salt – pepper

Preparation

  1.    Place in a bowl tofu,  spices mix, lemon juice, olive oil, salt – pepper and mix well.
  2.   Place the bowl in the refrigerator for 1 to 3 days
  3.  Boil flaxseed with 500 gr. water over very low heat, after some time you will see that this mixture has become sticky like egg … (so with that we will replace the egg in the breading).
  4.  Allow the mixture to cool so we can put our hands in.
  5. We are moving with the process for breading, first dip the tofu in the mixture of flaxseed, after in the flour, again in flaxseed and finally in the bread crumbs (make sure to cover all the tofu with it).
  6. Deep Fry for 4 to 5 minutes or until the nuggets get a golden brown color

Serve with tofu mayonnaise

Ingredients

  • 200 gr. champignon mushrooms  chopped
  • 200 gr portobello mushrooms  chopped
  • 200 gr pleurotus mushroomschopped
  • 6-8 garlic cloves
  • 2 tablespoons of thyme
  • 4 tablespoons flour
  • 1 cup grated parmezan
  • 1 cup bread crumbs
  • 1 organic egg
  • salt – pepper

Sauce

  • 1 cup of mayonnaise
  • 3 tablespoons of capers
  • 2 pickle red peppers

Preparation

  1. Place the mushrooms, garlic and thyme in an oven pan mix well and bake for 20 to 30 minutes at 180C (212 fahrenheit) or until they become crisp.
  2. Allow the mixture to cool for an hour.
  3. Take the half of the mushrooms and blend them well until they melt.
  4. Put all the ingredients in a basin and knead them.
  5. Put the mixture in the fridge for 1 or 2 hours.
  6.  Make patties and deep fry them until they become golden brown.

Sauce preparation

  1. Place the capers and the peppers in a blender and blend them well.
  2. join the mayonnaise and mix with a spoon.

Burger ingredients / preparation

  • Burger breads
  • sliced onions
  • sliced tomatoes
  • slices of edam or other yellow cheese
  • lettuce leaves cut in half
  1. Cut the burger bread in half horizontally
  2. Apply the sauce in both sides
  3. Put in sequence lettuce, onion, tomato, mushroom patties and cheese
  4. Enjoy!!!
