ingredients

• Enough rocket for a salad
• 2 tbsp pomegranate seeds
• 2 tbsp crushed walnuts

Dressing serves 6 -8

• juice from half pomegranate
• 1 tbsp mustard
• juice from 1 lime
• 2 tbsp vinegar
• 1 tbsp  whole coriander seeds
• 1 tsp salt
• 4 -5 tbsp brown sugar
• 300 ml sunflower oil

preparation

1. Put all the dressing ingredients in a blender except oil in a blender
2. Start blending by adding oil slowly until you have a thick dressing
3. In a basin mix rocket, pomegranate seeds, walnuts and 4-5 tbsp of the dressing and serve
